Amsterdam's top-rated restaurants, but don't expect a wide-ranging selection. The byword
is basically 'whatever we have on hand' - and it's usually delectable. Reservations recom-

La Oliva's visually stunning food is inspired by the Basque region. Stroll by and you can
see the colourful pintxos (tapas with a northern Spanish/southern French twist) skewered
with wooden sticks and stacked on the gleaming bar. Hungry foodies sip cava (Spanish
sparkling wine) and gaze lustfully at the stuffed figs, mushroom Manchego tartlets and
Iberian ham with pear. ( www.laoliva.nl ; Egelantierstraat 122-124; mains €21-26;

TRADITIONAL DUTCH

When 'Mothers' opened more than 25 years ago, staff asked customers to bring their own
plates and photos of their mums as donations, and the result is still a delightful hotch-
potch. So is the food, including stamppot (potatoes mashed with veggies and served with
smoked sausage), seafood and a rijsttafel -style presentation of traditional Dutch dishes in
many small plates. Book ahead. (

Located near La Oliva (see 15 , C4) on a street bursting with excellent food, the
Tuscan classics, fresh stuffed pastas and sublime yet simple desserts here are among our
favourites. We witnessed a diner so thrilled with her ravioli that she asked to kiss the chef;
he graciously complied. (
