BANC MODERN FRENCH Winner of “Best Restaurant” in 2001 from
the Sydney Morning Herald's Good Food Guide, Banc is an upmarket establish-
ment that serves up top-class French-inspired food in a formal atmosphere of
columns and white linen-clothed tables. It's popular with business executives
and high flyers. Service is excellent, and the cellar has over 900 wine labels from
Australia and abroad. The specialties are a mouthful: among them “Assiette of
Lamb with Haricot Blanc and a Ragout of Vegetables,” “Open Ravioli of Crus-
tacea with a Vanilla and Oyster Nage,” and “Pan-Fried John Dory and Roasted
Scallops with a Curry Emulsion.” Dress to impress. Downstairs is Wine Banc,
great for cocktails and cigars (and live jazz on Fri nights).

Level Two Revolving Restaurant GRILLS/ROASTS/SEAFOOD/
ASIAN For those not scared of heights, Level Two offers a self-service all-you-
can-eat buffet—ideal for those who don't want to pay for the a la carte goodies
a floor down at its sister restaurant, Level One. This place is popular with
tourists, who come here for the stupendous views across Sydney and, on a clear
day, as far as the Blue Mountains. The dining area takes about an hour to fully
rotate, but even going this slowly I find it a bit off-putting—especially when
you're some 250m (820 ft.) up. You can heap your plate with a selection of five
appetizers, then choose between 15 main courses, including steaks, roasts, pork
knuckles, beef Stroganoff, seafood, and Asian dishes. There are also five desserts
to choose from. The prices are as sky-high as the views.

Tetsuya's MODERN JAPANESE Chinese chef Tetsuya Wakuda is
arguably Sydney's most famous chef, and his food is certainly cutting edge. This
is not Japanese food as you might know it, but a fusion of Eastern and Western
styles that has made him the darling of Australian cuisine. Everybody who is
anybody wants to eat here in the tranquil Japanese garden that serves as the
restaurant space—getting a table is difficult. To have a chance you need to book
4 weeks in advance. (They don't take bookings before this time.) The restaurant
is stylish and light, and the food mind-blowing. The menu is constantly chang-
ing, but to give you an idea, think tofu with duck foie gras and sherry vinegar;
marinated roast breast of duck with coffee; tartare of tuna with olive oil and
wasabi jelly; and seared filet of veal with porcini mushrooms, sautéed green
beans, and asparagus.
