Hearty bean soup
Pasta, beans, and vegetables make this soup a satisfying meal.
1 Heat the oil in a large pan over
medium heat. Add the celery, carrots,
and onion and cook for 5 minutes,
stirring occasionally, until tender. Stir
in the drained beans, the tomatoes
with their juice, and the stock. Season
to taste with salt and pepper. Bring to
a boil, stir, then cover and let simmer
for 20 minutes.

REHEAT TIME 8 MINS
2 tbsp olive oil
2 celery stalks, finely chopped
2 carrots, finely chopped
1 onion, finely chopped
1 x 14oz (400g) can of white
cannellini beans, drained
2 Add the pasta and simmer for
10-12 minutes longer, or until cooked
but still tender to the bite.
1 x 14oz (400g) can chopped
tomatoes
3½ cups chicken or vegetable
stock
3 To reheat at the campsite, bring to a
boil and then simmer for 5 minutes.
Stir in the parsley and half the
Parmesan, then adjust the seasoning
as needed. Serve hot, sprinkled with
the remaining Parmesan.
