Chile-flavored eggs
A quick supper, or even breakfast dish, the chile adds a great kick.
1 Heat the oil in a medium saucepan
with a lid. Add the onions and pepper,
cook until soft, and then add the garlic
and chile.
SERVES 4
TIME TO COOK 15 MINS
1 tbsp oil
1 large onion, finely chopped
2 Pour in the tomatoes and simmer
with the lid off for 10 minutes. Make
“holes” in the tomato sauce and break
the eggs into these. Cover the pan and
cook gently for 5 minutes until the
eggs are cooked. Spread with cheese
and cook with the lid on for a few
minutes longer until the cheese melts.
1 green bell pepper, finely
chopped
2 garlic cloves, crushed or
1 tsp garlic purée
1-2 tsp chile powder or
1-2 tsp Tabasco sauce
2 x 14oz (400g) cans chopped
tomatoes
4 free-range eggs
¼ cup cheese, grated
3 Sprinkle plenty of chopped parsley
over the top and serve with rice,
potatoes, or crusty bread.
