In Figure 4.2 vegetables used as part of the meal are shown combined in a salad. In
addition to salads, vegetables are prepared using local or family recipes and eaten as
part of the meal. On the whole the Filipino farmer eats less vegetables than does
the Ecuadorian or U.S. farmer. This, however, is true only of the people in the
