More formal and elaborate dishes, available for dinner at the Cracked
Conch, feature some of the most cr eative and upscale combinations
of conch and tur tle steak w e've ev er seen. E xamples include a
steamed-conch-and-snapper-coconut casser ole; a skillfully pr epared
roulade of conch; and tur tle steak braised with P arma ham, fr esh
tomatoes, and basil. Also av ailable is a platter with fr esh local tuna
prepared three different ways: as marinated sashimi, as fried tuna rice
rolls with pickled papaya, and as a tartare with fresh cilantro. Sunday
brunches are festive, with buffet stations set up within the gleaming
stainless-steel kitchen.

Grand Old House AMERICAN/CARIBBEAN/P ACIFIC
RIM The Grand Old House is the island's premier caterer and hosts
everything from lavish w eddings and political functions to informal
family celebrations. This former plantation house lies amid venerable
trees 2km (1 1 / 4 miles) south of G eorge Town, past J ackson P oint.
Built on bedrock near the edge of the sea, it stands on 129 ir onwood
posts that support the main house and a bevy of gaz ebos.
For appetizers, we recommend the roasted lobster Napoleon or the
marinated conch Cayman Island-style with tomato, cilantro, and Key
lime flavorings. Also worthwhile is the tequila-infused snow crab and
lobster laid on a mango gazpacho with spicy cucumber noodles. A
signature main course is a platter of baked shrimp and scallops gratin
in white wine, or the Cayman-style tur tle steak in a tomato-and-
white-wine sauce. Among fish dishes, we like the fire-roasted Chilean
sea bass in balsamic syr up on a sw eet-potato mash with a candied
lemon-and-mango beurre blanc.
