Tips A Caymanian Dinner, Please
If you're staying at one of the many condos and villas that
pepper Grand Cayman, you can call a private caterer and
order an island dinner to be delivered. One of the best is
Burton Ebanks ( & 345/926-8294 ).

nut r eduction. A t lunch, y ou can or der w ell-stuffed sandwiches,
freshly made salads, and fr om-the-oven pizzas. I f y ou opt to dine
under the stars, and if it's a Friday or Saturday, you'll hear some of the
most talented local musicians playing soca and calypso in the bar

Ristorante Pappagallo IT ALIAN/SEAFOOD One of the
island's most memorable restaurants lies on a 6-hectare (15-acre) bird
sanctuary overlooking a natural lagoon, 15 minutes nor th of George
Town. I ts designers incorporated Caymanian and A ztec w eaving
techniques in its thatched r oof. Glass doors, black marble, and pol-
ished brass mix a kind of E dwardian opulence with a Tahitian decor.
Inside, you'll see some of the most beautiful (caged) parr ots on the
island, separated from the dining and drinking ar ea (for sanitary rea-
sons) by plate-glass windows. The lobster-and-scallop bisque in coco-
nut cream and the carpaccio of raw beef with ar ugula are appealing
appetizers. P astas ar e full of flav or, especially the fettuccine with
lemon-grilled chicken and sun-dried tomatoes and the penne with
homemade sausage. F ish and shellfish ar e well prepared, or y ou can
opt for either the peppered West Indian pork tenderloin in an apple-
bourbon sauce, or a combination of lobster and shrimp , prepared in
the style of the chef, with pepper, garlic, diced tomatoes, mushrooms,
and a flaming brandy and tarragon-flav ored cream sauce.
