Zaika INDIAN Zaika's name translates as “sophisticated flavors.” The cooking
is complex but the final tastes meld together. It was one of the first Indian restaurants
to get a Michelin star; the original innovative chef, Vineet Bhatia has gone, but Zaika
still hits the spot. Start with a platter of salmon marinated in orange and ginger, smoked
in the tandoor with salmon cured with lemon, and a lemon and smoked salmon pan-
cake; follow with our favorite, duck breast masala delicately cooked in a jus with cloves
and cardamom with garlic and chili mash and okra. For a true feast, order the tasting
menu, Jugalbandi, or if you're fish lovers, go for the seafood tasting menu.

Gordon Ramsay FRENCH Whatever may be happening in the fiery
chef 's empire elsewhere, a meal here remains one of London's great pleasures. From
the moment you walk in the door, you are cosseted, and made to feel special. The
menu is changing under head chef Clare Smyth—a chef to take note of—while
retaining the subtlety and delicacy of the master. Try, for example, ravioli of lobster,
langoustine, and salmon with a lemongrass and chervil velouté, or sautéed foie gras
with roasted veal sweetbreads. The emphasis is on retaining the essential flavors of
top ingredients while delivering exquisite tastes. A rare experience.

Pig's Ear MODERN BRITISH/GASTROPUB The ground floor bar serves
excellent traditional beers, and dishes like risotto or roast guinea fowl in the packed back
dining room. The Blue Room serves more sophisticated meals: smoked salmon mousse;
a good charcuterie plate for starters; wild duck with buttered Savoy cabbage, miso-glazed
turnips, and sour cherries as a typical main. It's a posh gastropub, befitting its posh loca-
tion in Chelsea, but it's friendly and casual and you're always made to feel welcome.

Tom's Kitchen TRADITIONAL BRITISH High octane, hugely busy, and
wildly popular, this former pub has been turned into a brasserie from top chef Tom
Aikens (p. 138), and is a great all-day venue. The menu is a rundown of all that is
good in London's more casual venues: full English breakfast, butternut squash soup;
mackerel paté; excellent pastas and salads; mains like pork belly and lentils; and the
show-stopping baked Alaska flamed at the table.
