duce. Reserve a spot in advance for the small-scale artisanal cheesemaker's demonstration
and tasting ($5); watch the curd-making and cutting, then sample a half dozen of the fresh
and aged cheeses. All of the milk is local and organic, with vegetarian rennet in the soft
cheeses.
