Varieties
It's always nice to have a choice, and here you really do. Asian varieties of both canta-
loupes and honeydews are available, with creamy white to golden rinds that are smooth
or netted, and flesh ranging from pale green to salmon. They are all mouthwatering and
freeze well for out-of-season enjoyment.
Varieties to look for: Hybrid Gold Sweet, Hybrid Jade King, Hybrid Golden Liner.
CULINARY USES
The options for using sweet melons in desserts, fruit salads, and so forth are too well
known for me to detail here. Use these melons any way you would use honeydews and
cantaloupes. Asian melons are even sweeter and more fragrant than the finest melons
you have ever tasted.

In Asian countries, pickles are eaten not only because they're delicious, but because
they're thought to be good for you. Most Americans aren't aware that there are such
things as Asian pickles, yet the variety and number of them would turn Mr. Heinz green
with envy. Almost every vegetable — cabbages, radishes, and turnips, as well as melons
— finds its way into the Asian pickle barrel.
