If the only mustard greens you've ever eaten are the common garden variety, you may
be inclined to turn away from this vegetable without another thought. The mustard
greens commonly available in North America are too pungent for many tastes. Chinese
mustard greens, or Chinese mustard, are not: they are among the most delicious of all
greens.
Chinese mustard is a native of Asia, where it has been under cultivation for thou-
