The Chinese have eaten water chestnuts for many centuries. The chestnuts are
grown in large tanks as a single crop, or sometimes grown in rice paddies, since they
don't interfere with the rice plants.
Aside from being good eating, Chinese water chestnuts make an attractive addition
to a mixed water garden. Their tall, spiky foliage offers wonderful contrast to other wa-
ter plants, and they combine well with most other water plants, including the lotus.
