If you think of burdock as that bothersome weed with the prickly burrs, you may wonder
what it's doing in a book on Chinese vegetables. As a vegetable, you may be more fa-
miliar with it by its Japanese name, gobo. As gobo, it is an important and much enjoyed
Japanese vegetable, lending itself to a number of classic dishes.
