The Chinese cabbages most commonly found in supermarkets are the michihili and
napa types. Michihili types are tall, about a foot or so, and more like romaine lettuce.
Napa types are shorter and chunky-looking, about 8 inches thick and a bit taller than
wide. Both are mild flavored and deliciously crisp with pale green leaves, usually at-
tractively crinkled, and sometimes shading to darker green.
