Pak choy is closely related to Chinese mustard greens (see page
11
). The former was
sometimes called Chinese white mustard cabbage, the latter Chinese green mustard
cabbage. Pak choy doesn't look anything like the Chinese cabbages we've been talking
about up to this point. You've seen it in your supermarket and you've eaten part of it
(the green leaves, not the white ribs) in won ton soup in Chinese restaurants. The green
leafy vegetable in Chinese dishes is usually pak choy — and so are the white, crisp,
inch-long pieces you find in combination with it.
