After removing the beans from the sun or dryer, let them cool completely before
putting them away. Do this in a dry place so they don't reabsorb the moisture you've
just driven off.
Once dried and cooled, put in tightly sealed containers (a plastic bag, for instance)
and store in a cool (50°F), dry place out of sunlight. To kill any insect larvae, place
thoroughly dry beans in the freezer for a few days before moving them to their storage
spot.
It's a good idea to check each batch for the first couple of weeks. If you see any
moisture forming on the inside of the container, dry for another couple of hours, prefer-
ably in the oven, and put into new containers. Discard any beans that develop mold.
