CHOCOLATES
Chocolat is not just appreciated in Paris, it's almost a cult.
People talk about chocolate in almost the same way they talk
about wine, from the chocolat chaud found in tearooms and
the delicious creations of famed chocolatiers , to the simple
tablettes (bars) sold at supermarkets. Chocolates in France
are so delicious because they contain a high percentage of
cocoa—sometimes more than 70 per cent—and the higher the
quantity of cocoa, the richer the confection; even chocolate
bars in supermarkets display the percentage of cocoa in each
bar. Look for chocolate in the form of fish just before April
Fool's Day ('April Fool' is ' poisson d'avril ', and poisson means
'fish'), hearts before Valentine's Day, bunnies and chickens
before Easter, and even chocolate mushrooms in autumn. See
Confiseries, chocolateries in the Yellow Pages .
