The variety Udacha exceeded Volzhanin in productivity (Table 6.4). Its market-
ability is also high; the content of starch is at same level with standard variety and little
concedes to Bars in all signs.
The variety Bars showed itself in the positive light in productivity and qualitative
indicators and exceeded the total effi ciency of the zoned variety Volzhanin at 2.5-6.0
t/ha.

Indicator of dry matter content in potato tubers is one of the major factors for chips
and French fries production. Many authors agree that the high content of reducing
sugars promotes pulp blackening in raw and boiled state, which reduces tuber market-
ability.
The content of sugars in the studied varieties was within the normal range ex-
cept the variety Volzhanin that gained 0.35-0.77 mg % on experience: variants due to
which boiled potatoes of this variety turned black quicker than others. Less reducing
sugars were gained with the variety Bars (0.18-0.23 mg %) that points to its suitability
for industrial processing.
6.5 CONCLUSIONS
1. Researches are interested from the point of view of steadily high and ecologi-
cally safe harvests in the modern terms of agricultural production while at the
background reducing organic fertilizers and their costliness.
2. Mineral fertilizer dose N 64 P 64 K 64 , applied on prospective potato varieties, Bars
and Udacha, in the mountainous area provide excellent tuber quality and high
yield (25.8; 25.6 t/ha) commercial potato, at the level of 93 and 92 percent.
3. Maximum quantity of reducing sugars observed at raised doses of fertilizers.
4. There was growth of maintenance of reducing sugars due to the introduction
of enhanceable doses of fertilizers.
