locals on everything from spicy chicken skewers to piping-hot hotteok (either the sweet or
savoury versions of these deep-fried dough pockets).
Vegetarians & Vegans
Although rice and vegetables make up a considerable part of their diet, few Koreans are
fully vegetarian. It can be a struggle for vegetarians in ordinary restaurants. Many other-
wise seemingly vegetarian dishes have small amounts of meat, seafood or fish added for
flavour. The same is true of kimchi. Generally risk-free things to order include bibimbap
or dolsot bibimbap , both without meat (or egg), beoseotjeongol (mushroom hotpot),
doenjang jjigae (soybean paste stew) , dubu jjigae (spicy tofu soup), jajangmyeon
(noodles and sauce), vegetable pajeon, and pumpkin juk (rice porridge).
