CHRISTIANE CHABAUD
One of Madame Chabaud's two daughters, Christiane runs the delicious Chez
Madame Chabaud restaurants in Majunga and Katsepy. Her sister runs the hotel
of the same name.
MAJUNGA FOR FOODIES
Majunga is a prime hunting area and there is a lot of game meat in season (May
to October): roussette (fruit bat), porcupine (with a taste similar to pork but fat-
tier), comb duck, partridge and potamochère (wild boar). Thanks to the coast
and the estuary we also get excellent seafood, including ouassous (huge cray-
fish) and camarons (large freshwater prawns): they are delicious grilled or
stuffed.
FAVOURITE PLACE AROUND MAJUNGA
The natural swimming pools at the Grottes d'Anjohibe are magical: when I go
there, I feel like I'm in a film. There is a small basin for children, a big one for
adults...and the colour of the water and the plants - God must have come this
way. I also flew to Soalala recently and saw Katsepy and the flat Tsingy of
Namoroka: it was really special to see all this from above.
TIME OUT
I like going for a drink at Karibo Lodge in the evenings: it's got postcard sunset
views.

Small, intimate and oh-so-delicious, Chez Madame Chabaud is an institution in Majunga.
Christiane (the original Mme Chabaud's daughter) prepares a divine fusion cuisine mixing
Malagasy, Creole and European influences that befit the city's heritage. Try the camaron
(largefreshwater prawn)orthe ouassous (ahugecrayfish) andthe mean cocktails. The din-
ing room is small, so booking is recommended.
